Healthy Chicken Nuggets - Gray liked, Jen approved.

I heard it over and over before we got married, "You have to sacrifice on both ends" "There will be things you will have to compromise on" "You will have to find a happy medium that works for both of you" and etc... well, those words have taken a whole new meaning to me now that we are about 4 months into our married life. You see I used to reallllllly enjoy eating realllly healthy, and I was able to because I was cooking for one...me, myself, and I. If I wanted to eat kale chips and tuna for dinner three times a week I could and there wouldn't be problem at all! Well, the me, myself, and I eating habit days are over for this girl! It is now me, myself and a BIG MAN!! I have to give Gray props, he will happily eat whatever I make and he even enjoys eating healthy [sometimes] but in order for him to really enjoy the food, compromising must come in to play!

I want to talk more on this in later posts, but for now, a successful Gray liked and Jen Approved recipe!!!

Healthy Chicken Nuggets and Zucchini Chips

Ingredients
2 chicken breasts
1 Zucchini
3-4 eggs
Whole wheat bread crumbs (I use Panko brand)
Freshly grated Parmesan cheese
Garlic powder

Directions
preheat oven to 400. Put eggs into a bowl by themselves. Pour 1 cup bread crumbs and 1 cup parmesan cheese into a bowl with a dash of garlic powder and mix together. Cut chicken breasts into "nuggets". Slice zucchini. Dip chicken into eggs first then bread crumb mix. This is the "breading" of your nuggets. Repeat this process with all of the nuggets and place them on a baking sheet that has been sprayed with olive oil. Put in the oven for 10-12 minutes to bake. Dip the zucchini slices into the eggs and then bread crumbs mixture and repeat the same process as you did for the chicken. Put these on a baking sheet sprayed with olive oil and put them in the oven for 10 minutes. After 10-12 minutes take the chicken and zucchini out and flip them on the other side. Bake 10-12 more minutes and then take them out so you can CHOW DOWN!

This meal really turned out delicious! You can dip your chicken nuggets into BBQ sauce, ketchup or any other fun sauce you may like! I loved this meal! I knew everything that was put into it AND Gray couldn't stop raving over it. That's a huge WIN in my book! :-)

  1. Oh my word. I LOVE this post!!! If I were eating dinner with you that night, I totally would have eaten that chicken. I just love you THAT much :) Who knows, this might even show up in our house one day! Keep 'em comin! PS -- I totally remember eating off of those blue and white flower plates at the boys house. Wow. How much has changed since then! So crazy.

  3. Hey, so I really like to use almond meal instead of bread crumbs. I don't know if you're particular about gluten free or anything, but I prefer nuts over bread so I use almond meal and it would be so delicious bc it's awesome on chicken! You can get it at Trader Joes in the nut section, pretty much right when you walk in at the one in Gville.
