Banana Protein Pancakes

Today I decided to have a little fun with breakfast and steer away from our normal routine of oats! So, after skimming the pantry for ingredients I decided to start from a recipe I found here and change it up a little to my liking! :)

Ingredients
  • 2 cups quick oats
  • 12 egg whites
  • 1/4 cup 1% low fat cottage cheese
  • 2 medium sized bananas
  • 2 tsp vanilla
  • Dash of cinnamon
  • Coconut oil
  • Agave Nectar ( I was going to use this as the topping which I am sure would have been delicious, but instead I used 100% pure maple syrup that was already in the fridge and needed to be used!



I had a little visitor while I was taking pics.... :)
Directions
1. Add all ingredients into the blender and mix


2. Heat griddle to medium heat with a little coconut oil on it.
3. Measure out 1/3 cup of batter per pancake
3. Once the batter starts bubbling up, flip the pancakes until browned on both sides and serve! 

100% pure maple... SO GOOD!

I was stuffed after two pancakes, these babies are FILLING! Gray ate about five.. what a man! :-)  FYI- The batter may end pretty runny so if you want to add a little oat flour or wheat flour you could do that to thicken it up. I ended up adding around 1/3 cup of flour to my batter. The pancakes are pretty thin, but they have a yummy banana-y taste and are delicious with some maple syrup on top! 

Now we are off to enjoy a Saturday of no plans except to relax and maybe watch a few episodes of 24!  We may or may not have an addiction. :-)
