Mini Veggie Packed Frittatas

The other day I needed to make lunch FAST because I was one hungry girl! I decided to whip up some mini frittatas that were veggie packed! They were pretty quick to make and turned out really yummy! The recipe is below:

Ingredients
  • Olive oil spray
  • 1 3/4 cups egg whites
  • 4 eggs
  • 3/4 zucchini
  • 1 crown broccoli
  • 1/4 cup chopped green onion
  • 1 tomato
  • sea salt
  • pepper
  • oregano
  • basil

Directions

1. Preheat oven to 375 degrees
2. Spray muffin pan with Olive oil
3. Start cutting up all of your veggies and mix them together in a big bowl (broccoli, tomato, green onion and zucchini)


4. Put your egg and egg whites in another bowl and mix together. Add your salt, pepper, oregano, and basil to the egg mixture. (I just eye balled the amounts)


5. Put the vegetable mix in the muffin pans filling them about 2/3 of the way full.
6. Pour the egg and egg white mixture almost to the top of the muffin pan! The egg mixture will fill the tin up the rest of the way!



7. Let them bake for 30 minutes until fritattas are slightly brown on the top. If you like cheese, you can sprinkle sharp cheddar (or your favorite cheese) on the top 5 minutes before they are done. YUM!




We dipped these bad boys in fresh salsa and they tasted great! My only critique for next time I make this would be to try using foil muffin cups instead of cooking these directly in the pan because it took FOREVER to clean!
