If you are looking for something that's easy to make, healthy, filling AND yummy... this recipe is for you! I made these the other night and really enjoyed them! I hope you do too! :)
Ingredients
4 Bell Peppers (I used 2 green, 1 yellow, and 1 red)
1.5 ib 99% lean ground turkey
1 cup cooked quinoa
3 egg whites
1/2 cups chopped scallion
2 tablespoon italian seasoning
2 teaspoon garlic powder
spoonful of minced garlic
1 teaspoon salt
1 cup tomato sauce
Directions
1. Preheat oven to 350 degrees
2. Wash, cut in half, and de-seed bell peppers
3. In a large mixing bowl combine turkey, cooked quinoa, egg whites, scallion, seasonings, 1/2 cup tomato sauce. Mix very well!
4. Stuff each pepper with the turkey/quinoa mixture and then put the remaining tomato sauce on top of each pepper halve.
5. Bake the peppers for 45 minutes and serve!
For next time:
I found the original recipe here. I tweaked a few things to my liking! When I make this again, I will reduce the turkey to 1ib because 1.5ibs is just too much! I stuffed the peppers full and still had a little extra meat! We also ate these with some of our favorite hot sauce, Chalula. Chalula adds a nice flavor kick to the dish!
We really liked these peppers! I ate one half and Gray ate two! We were stuffed and had lunch for the next day! The peppers heat up well in the microwave too. In fact, we thought they were even better the next day because the flavors had more time to soak in! I always count a recipe a major WIN when we are able to get two meals out of it! :) Believe me, that is a rarity with my HUNGRY HUBBY! :)
